MOZZARELLA STUFFED MINI MEATLOAF

Ingredients:
2lbs. Ground Beef (or your favorite ground meat)
1 Meatloaf Seasoning Packet
2 Eggs
½ cup Milk
¼ cup Dry Bread Crumbs
½ cup Ketchup
All Purpose Seasoning (Captain’s Choice)
Mozzarella Cheese (sticks or circles or shreds)

Directions:
Mix all ingredients in bowl except ketchup until all blended.

Take part of the mixture and line the bottom of muffin pan.

Insert cheese on top of the mixture and press down into mixture so it will cover the cheese a little.

Add remaining mixture to cover the cheese.

Sprinkle All Purpose Seasoning (Captain’s Choice) on top of mixture.

Spread the ketchup over the top.

Put on grill that is heated to 375*F for 15 minutes or until you reach 155 degrees internal temperature.

Let rest for 5-10 minutes then enjoy.
