PULLED PORK SMASHED POTATOES

Ingredients:
• Leftover pulled pork
• 1 bag golden mini potatoes
• 1 Tbsp olive oil
• Dirty Bird rub
• SPG Rub
• 3 green onions
• 1 tsp minced garlic
• Shredded cheese (your favorite)
Directions:
1. Put potatoes in gallon bag with olive oil and minced garlic. Seal and shake well. Then add SPG and Dirty Bird, and repeat.
2. Preheat smoker or oven to 350ºF (177ºC).
3. Pour potatoes on baking dish. Put on cooker for 20 minutes, or until soft enough.
4. In the meantime, heat up pulled pork.
5. When done, bring off the cooker, spread them out, and smash.
6. Top with pulled pork, chopped green onion and cheese.
7. Give another hit of SPG and Dirty Bird, to taste, and put back in the oven or smoker until your cheese is golden.
8. Enjoy!
